Over the weekend, I did some grocery shopping at Costco and picked up a massive pack of thinly sliced meat, similar to daepae samgyeopsal (thinly sliced pork belly). Because it is fresh and refrigerated, it is incredibly versatile. We use it frequently for various dishes like Bulgogi or spicy Jeyuk stir-fry!

1. Costco Bulk Meat: Smart Portioning & Defrosting Hack
A huge pack of this meat costs around the mid-$20s, and buying it in bulk like this usually lasts us about a month or two. To make it convenient for daily cooking, I portion it out into single-meal servings right away.
Here is my go-to method: I lay down a sheet of parchment paper, place a portion of meat on top, cut the paper, and then stack them into plastic bags before tossing them in the freezer. The parchment paper prevents the meat from sticking together, making it super easy to take out exactly what I need later.
💡 The Best Way to Defrost Meat!
You can slowly thaw the frozen meat in the fridge, but if you are in a hurry, try soaking it in slightly warm sugar water! This clever hack melts the meat quickly without losing any meat juices, keeping it incredibly tender.
2. The Ultimate Combo: Thin Meat & Spicy Bibimmyeon
You can't buy fresh, thin pork belly and not eat it immediately! For lunch, I grilled up a fresh batch and paired it with Bibimmyeon (Korean spicy cold noodles).
The combination of savory, rich grilled meat and sweet, spicy, and tangy cold noodles is absolutely out of this world. I don't even need to explain how perfect this pairing is; if you know, you know!
3. Preparing for an August Move: A Heartwarming House Showing
We are scheduled to move out in August, so our landlord has been advertising our current rental to find new tenants. Today, we had a house showing scheduled. After dropping my child off at school in the morning, I quickly cleaned up and organized the house, waiting for them to arrive.
When the landlord came by, they actually bought us a little gift on their way over!
I am deeply grateful for their kindness, and it reminds me of God's grace in sending such wonderful people into my life. I truly hope this house meets a wonderful new family and gives them lots of beautiful memories, just as it did for us.
